Ingredients

  • 1¼ – 1½ pounds bone-in beef pieces
  • 1 cup neutral flavored oil
  • 2 large onions, sliced thin
  • 2 tablespoons ginger garlic paste
  • tomatoes, sliced or diced
  • ½ cup full-fat yogurt
  • 1 tablespoon coriander powder
  •  teaspoons red chili powder
  • ½ teaspoon turmeric
  • ½ teaspoon paprika
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground mace
  • Salt, to taste
  • 4 green cardamoms
  • 4 cloves
  • 2 black cardamoms
  • 2 1-inch pieces cinnamon
  • 1 bay leaf
  • 1 star anise
  • 3 medium potatoes, peeled and halved
  • ½ cup chopped cilantro
  • ½ cup chopped mint
  • 2 tablespoons lemon or lime juice
  • 1 green chili, halved (jalapeno or serrano)
  • 3 cups parboiled/sela basmati rice
  • Pinch of powdered yellow or orange food color, optional

Instructions

  1. Rinse rice in cold water, and soak in cold water for at least 2 hours (can soak for up to 4 hours).
  2. Heat oil in a large vessel over medium-high heat. Add sliced onions and sauté until golden brown, 5 to 10 minutes.
  3. Transfer half of the browned onions to a paper towel lined plate and set aside. These will be used when the biryani is being layered.
  4. Returning to the cooking onions, add ginger garlic paste and beef, and sauté until the beef has a good sear on it, about 3 to 5 minutes. Reduce heat and add tomatoes, cover, and cook until the beef is tender and the onions and tomatoes have cooked down into a thick paste, about 1½ to 2 hours. Add splashes of water and stir as necessary to help tenderize the meat and to prevent burning at the bottom of the pot.
  5. While the beef is cooking, mix the following together in a bowl: yogurt, coriander powder, red chili powder, turmeric, paprika, black pepper, nutmeg, mace, salt, green cardamoms, cloves, black cardamoms, cinnamon, bay leaf, and star anise.
  6. Once the beef is ready, add the prepared yogurt and spice mixture. Cook until the oil begins to separate from the gravy, about 10 to 15 minutes. Add potatoes and cook until they are semi-cooked through (they will continue cooking while steaming with the rice), about 10 to 15 minutes. Remove from heat and mix in cilantro, mint, lemon (or lime) juice, and green chili. Set aside.

Prepare Rice

  1. Heat water (enough to boil rice in) and salt in a large vessel over medium-high heat. Once it comes to a boil, add soaked rice (drain before adding), and cook until about 75% cooked through. Drain and set aside.

  1. In a large vessel, spread out half of the boiled rice, followed by the beef and potato mixture (masala). Cover with remaining rice. Sprinkle a pinch of food color, if desired.   • 3/4 tsp pepper, powdered
  • 1 tsp dried mango powder
  • 1/4 tsp saunth (dry ginger powder)
  • 2 tsp oil
  • 1 1/2 tbsp cashew paste
  • 1 1/2 tbsp cream
  • 2 tbsp besan
  • 1 Egg yolk
  • To taste salt
  • For garnishing coriander leaves

Instructions

  1. In a bowl mix together the mutton mince and the chicken mince. Mix them with your hands.
  2. Add ginger-garlic paste to it along with onion paste, red chilli powder, coriander powder, cumin powder, powdered pepper, dried mango powder, saunth, oil, cashew paste and cream. Mix nicely.
  3. Add besan (chickpea flour) and egg yolk to bind. Mix well.
  4. Add salt to taste. Mix. Cover and keep in the fridge for 1 hour.
  5. Skewer the kebabs onto oiled skewers and grill or roast till the outside is nicely browned. Baste frequently with oil while grilling.
  6. Once the kebabs are cooked, remove to a serving platter and garnish with onion rings, fresh coriander leaves and lemon wedges.

  1. Use skewers and grill on charcoal for that smoky flavor.
  2. Make sure the mince is dry to help it stick properly.
  3. Baste with butter or ghee during grilling to keep them juicy.

4. Kaleji Masala – The First-Eid Morning Staple

On the first day of Eid, it’s almost a tradition to prepare fresh liver (kaleji) right after Qurbani. It’s quick, hearty and gives off major Eid vibes.

  • 1.1 lb (½ kg) chicken liver cut into bite sized pieces
  • 1 teaspoon ginger and garlic paste
  • 1 lemon we’ll just be using the juice from this
  • 0.5 teaspoon cumin powder
  • 0.25 teaspoon red chilli powder
  • 0.25 teaspoon turmeric powder
  • 1.5 teaspoon coriander powder
  • 2 green chilies 4-5 for more heat, finely chopped or minced
  • 4 tablespoon (80 g) yogurt ideally full fat
  • ⅓ cup (85 ml) oil
  • 1 teaspoon cumin seeds
  • 6 whole cloves
  • 4 green cardamoms
  • 0.5 teaspoon whole black pepper or coarsely crushed black pepper
  • 1 medium piece of whole cinnamon
  • 1 medium onion finely processed into a paste
  • 2 medium tomatoes finely processed into a paste
  • salt to taste (start with 0.5 teaspoon and then adjust)
  • fresh coriander for garnishing
  • green chilies for garnishing

Instructions

  • Marinate the liver with all the ingredients from the ‘marination’ section and marinate everything for a minimum of one hour.
  • In a deep pot or wok, heat the oil. Add in the onions and whole spices and sauté them over a medium to high heat for 6-8 minutes, until they begin to turn lightly golden. Please note, blended onions won’t turn much darker than this shade, so once they’ve got some colour, you’re good to proceed.
  • Add in the blended tomatoes and sauté everything further over a high heat till the mixture becomes very thick, concentrated and glossy. The oil should begin to separate at the edges. Towards the end of this, add in all the spices.
  • Add in the marinated liver, alongside all the marination liquid. Sauté this mixture in the oil really really well – this will take lots of time as the liver and yogurt will release some moisture. Keep sauteing the liver until the mixture looks thick and the oil separates at the edges.
  • Add half a cup/125ml of water, bring to a boil, then cover and cook on low for 5-10 minutes
  • Finish off with a heavy hand of coriander and green chilies for garnishing.
Tips for Perfection:
  • Do not overcook; liver can get rubbery if left too long on heat.

  • Add lemon juice at the end for an extra touch.

  • Cook it in butter or desi ghee for rich flavor

5. Nihari A Slow-Cooked Delicacy

Nihari is the epitome of patience and reward in Pakistani cooking. This slow-cooked beef or mutton stew is usually a breakfast item, but during Eid, it becomes a comforting meal option for lunch or dinner.

  • Beef shank (Nihari gosht) – 1.5 kg (with bones for flavor, marrow bones/nalli are a bonus)
  • Ginger garlic paste – 2 tbsp
  • Onions – 2 medium (finely sliced)
  • Plain flour (atta or maida) – 3 tbsp (used for thickening)
  • Water – 8–10 cups (adjust as needed)
  • Salt – to taste
  • Cooking oil or desi ghee – 1 cup (you can mix both for better flavor)

Instructions

  1. In a large heavy-bottom pot (or pressure cooker if short on time), heat the oil/ghee.
  2. Add sliced onions and sauté until golden brown.
  3. Add ginger-garlic paste and cook for a minute.
  4. Now add the beef shank pieces. Sear until the meat changes color and is lightly browned on all sides (about 10–15 minutes)
  5.  Add all of the nihari masala to the pot. Stir well so the spices coat the meat.
  6. Add salt and fry for another 5–6 minutes on medium heat to build flavor.
  7. Add water to the pot—enough to fully submerge the meat.
  8. Cover with a tight lid and cook on low heat for 4–6 hours.
  9. If using a pressure cooker, cook for around 45 minutes to 1 hour, then simmer uncovered for flavor.
  10. Stir occasionally and check the tenderness of the meat. It should fall off the bone easily.
  11. Mix the flour with half a cup of water to form a lump-free slurry.
  12. Gradually add this mixture to the nihari while stirring to avoid lumps.
  13. Simmer for another 15–20 minutes until the nihari thickens to your desired consistency.

Tips for Perfection:

  • Slow cook on low heat overnight or for 5–6 hours minimum.

  • Temper with fried onions and ghee at the end for that final flavor boost.

  • Garnish with julienned ginger, lemon, and coriander.

Over 60 Pakistani Pilgrims Stranded at Saudi Airport for 2 Days

More than 60 Pakistani Umrah pilgrims are still stuck at a Saudi airport for the second straight day. The pilgrims were supposed to return to Pakistan on a Saudi airline flight, but due to mismanagement by the airline, they missed their flight.

The stranded travellers said the airline staff gave no clear instructions or help. “No one has helped us despite waiting for hours in the lounge. We have been stuck here for two days,” one of the pilgrims told local media.

The group remains in the airport lounge without food or proper support and no alternate arrangements have been made so far. They also said there has been no proper communication from the airline, which has added to their distress.

A representative from the Pakistani embassy in Saudi Arabia has met with the group and collected their information. However, the pilgrims said that even after sharing their details, no solid steps have been taken to send them back home.

Sources believe the problem happened due to some issues with flight management procedures. But there has been no official explanation from the airline or airport authorities to confirm this.

As of Monday evening, the pilgrims were still at the airport without any confirmed flight. They are calling on both the airline and the Pakistani embassy to act quickly and arrange their return.

Neither the Ministry of Religious Affairs nor the Foreign Office has made any official statement on this issue yet. The situation has caused frustration and discomfort for the pilgrims, who had completed their religious duties and were now hoping for immediate action to help them get home safely.

Authorities Reignite Korangi Fire Hours After it was Extinguished

Mysterious Fire in Korangi Finally Goes Out After 18 Days

In light of environmental concerns over possible gas emissions, authorities on Tuesday reignited the Korangi fire, hours after it was extinguished, following a continuous 17-day burn.

The fire had first started on March 29 and kept burning non-stop despite several efforts by the fire brigade to put it out. Water could not control the fire and because of the seriousness of the situation, authorities had declared an emergency.

The Sindh government stayed in contact with all the concerned departments and monitored the situation every day. Due to the fire’s unusual behaviour and intensity, the Ministry of Energy formed a special investigative committee. This committee included experts from the Oil and Gas Development Company Limited (OGDCL), Pakistan Petroleum Limited (PPL) and Pak Refinery Limited (PRL).

According to an earlier report, American experts were also called in to assess the situation. The Petroleum Ministry hired a US company after the Chief Secretary of Sindh personally intervened. A spokesperson from the Chief Secretary’s office said, “Technical teams of the Pakistan Petroleum and the UEPL jointly visited and inspected the affected area.”

Current Situation of the Site

The spokesperson also confirmed that the team of experts, which included drilling and safety specialists, checked the site and observed the fire’s severity. They noted that the hole at the site had gotten bigger over time and hot water was being released from it. “The experts are consulting over a strategy to fill the well with cement,” the spokesperson added.

Despite being a local issue, the fire drew national and international attention because of how long it burned and the mystery around it. The combined efforts of national teams and foreign consultants finally led to the fire being extinguished.

Now, experts are working on long-term solutions, and the possibility of filling the affected site with cement is being considered to avoid any future hazards.

The FTC filed the case in 2020 during President Donald Trump’s first term. Now, it wants Meta to either restructure its business or sell off Instagram and WhatsApp.

Meta’s Chief Legal Officer Jennifer Newstead called the case weak and harmful to tech growth. In a blog post, she wrote, “It’s absurd that the FTC is trying to break up a great American company at the same time the Administration is trying to save Chinese-owned TikTok.”

The trial is very important for Meta’s future. Experts say Instagram brings in about half of Meta’s U.S. ad money. The case also gives a first look at how serious the new Trump administration is about taking action against large tech companies. Meta has tried to stay close to Trump, dropping content rules that Republicans said were unfair and giving $1 million to his inauguration. Meta CEO Mark Zuckerberg has also visited the White House several times recently.

FTC spokesperson Joe Simonson said, “The Trump-Vance FTC could not be more ready for this trial,” adding that the agency has some of the best lawyers working day and night.

Zuckerberg is Expected to Speak During the Trial

He will likely be asked about emails where he talked about buying Instagram to remove it as a threat and worrying that WhatsApp might grow into a full social network.

Meta says its purchase of Instagram in 2012 and WhatsApp in 2014 helped users and that old emails don’t matter now, especially with strong competition from TikTok, YouTube, and Apple’s messaging services. Meta will use traffic increases during TikTok’s temporary U.S. ban as proof that users do see the apps as interchangeable.

The FTC disagrees, saying Meta still controls the platforms where people share content with friends and family. Its U.S. competitors are Snapchat and a small app called MeWe. Apps like TikTok, YouTube, X (formerly Twitter), and Reddit are for broadcasting to strangers, not personal sharing, the FTC says.

In a past ruling, U.S. District Judge James Boasberg said the FTC had enough evidence to go to trial but would face hard questions.

The trial is set to continue until July. If the FTC wins, it will need a second trial to show that breaking up Meta would actually fix the competition problem. Losing Instagram would hit Meta hard financially. While Meta doesn’t share revenue per app, research firm Emarketer predicted that Instagram would earn $37.13 billion this year—over half of Meta’s U.S. ad income. Instagram also earns more money per user than any other social platform.

WhatsApp makes less money now but is Meta’s most-used app. It is becoming more profitable through business tools like chatbots. Zuckerberg believes this “business messaging” could drive future growth for the company.

This case is one of five major lawsuits where the FTC and U.S. Justice Department are accusing big tech companies of holding illegal monopolies.

The Pakistan Meteorological Department (PMD) has forecast that daytime temperatures in parts of the country could rise to between 46°C and 48°C due to a high-pressure system developing over the upper atmosphere.

This is concerning, and therefore health professionals and experts have urged citizens to adopt heat-conscious practices to protect themselves from soaring temperatures.

Regions That Will Be Affected By Heatwave

According to predictions, these elevated temperatures will be affecting southern Punjab, Sindh and Balochistan from 13th to 18th April. There will be highs of 46°C in Dadu, 45°C in Nawabshah, and 43°C in Hyderabad and Sukkur.

Karachi is also forecasted to experience hot and humid weather. The daytime temperature will be around 36°C. Some central Punjab cities including Multan, D.G. Khan and Sargodha are expected to record temperatures around 40°C. On the other hand, Lahore is predicted to reach 37°C. The absurd part is that Northern regions like Islamabad, Khyber Pakhtunkhwa, Kashmir and Gilgit-Baltistan will also experience temperatures 4°C to 6°C above normal.

It is very important for all civilians to stay safe from the upcoming heatwave. Here are some practical and smart ways to protect yourself:

Drink plenty of water throughout the day—even if you don’t feel thirsty. And most importantly, you must avoid caffeine and sugary drinks as they will only lead to further dehydration. That is the last thing we want!

2. Avoid the Sun During Peak Hours (especially between 11 AM – 4 PM)

Try to stay indoors between 11 AM and 4 PM as the sun’s rays are the strongest in these hours. If there is a requirement, then ensure you wear a wide-brimmed hat, sunglasses, and apply sunscreen.

Every summer, there is a news of a heatwave. But why? Why are heatwaves so common? What are the factors that are contributing to the increasing frequency and intensity of heatwaves in the country? Here is a gist.

  1. The on-going and still ignored climate crisis. Instead of complying to eco friendly habits, Pakistan’s pollution rate is only increasing day by day. Which is an invite to more and more global warming.
  2. There were alot of schemes regarding afforestation but very few were put into effect. This in addition to the disastrous deforestation with no check and balance is reducing the natural cooling of the environment. Look around, is the number of trees in our urban cities the same as before? Absolutely not.
  3. It is like Pakistan has some water shortage curse and no one seems to care about it. At least not the ones who have the power to. The decreased water availability is only exacerbating the stress on communities during hot periods.

Government and Community Measures

While personal precautions are essential, the role of government and community organizations in heatwave preparedness cannot be ignored. The NDMA (National Disaster Management Authority) and provincial authorities often release alerts and set up heatwave relief camps. It is very important for us to comply to these.

Moreover, in the future awareness campaigns, tree plantation drives and improved access to clean drinking water can significantly reduce the impact of heatwave in Pakistan. A far fetched but efficient proposal.

In an interview with a YouTube channel, the 19-year-old said he had known Onijah for over two and a half years. He clarified that he never left Karachi and was always in the city. Nidal said he had been in a relationship with Onijah and they had been in regular contact for more than two years. He added that her decision to come to Pakistan was her own. “She lived in Pakistan for three months and stayed at a hotel. During that time, my family and I were in regular contact with her. She even went shopping with my mother and sisters, they’re still in touch,” he said.

Nidal denied rumours that he had abandoned her. He said, “I have heard people say I left or cheated on her, but that’s not true. We still talk. There’s not a single video where she says I abandoned her.” He also blamed the media for spreading false information. “The media blew things out of proportion without checking the facts,” he stated.

When asked about rumours of marriage, Nidal said, “We are not married. I don’t know why Onijah is saying that. He ended the interview by saying, “Like any couple, we love each other. The people of Pakistan have always stood up for what they think is right and wrong. This time, too, the nation proved that it will always stand up to injustice. Just yesterday, on April 13th, thousands of Karachi residents gathered on the city’s main roads for a Gaza solidarity march. The march in Karachi was organised by two religio-political parties. It was done to express solidarity amid Israel’s bloody military conduct.

The Palestinian Crisis 

The whole world by now knows about the atrocities being carried out in Gaza. The war, which began on October 7th 2023, has killed more than 50,000 Palestinians and destroyed much of the housing and hospital infrastructure in the enclave.

This was originally a supposed “defense attack” after Hamas’s unprecedented attack on Israeli territory. However, the Palestinian residents later bore the consequences, and the bloodshed that followed was the most severe genocide ever carried out in the history of mankind. Since then, large protests have been carried out throughout the globe in solidarity with the Palestinians.

The recent march on Shahra-e-Faisal also came two days after large pro-Palestinian protests were observed in cities across Pakistan.

The March in Karachi

The rallies were organised by the Jamaat-i-Islami (JI) and the Jamiat Ulema-i-Islam-Fazl (JUI-F) on main Shahra-e-Faisal and Sharah-i-Quaideen, respectively. People from all walks of life attended these demonstrations, including representative bodies of lawyers, teachers, traders, doctors and other professionals.

JI and JUI Announce Mass Mobilisation

The JI leader, Hafiz Naeem, delivered an address to the crowd at Shahrah-e-Faisal and said that Karachi had “once again proved that it represents the entire Muslim world… the people of Gaza are facing unbearable pain, around 70,000 people were killed in Gaza, [a] significant majority among them were women and children.” He also stated that the role of the United Nations has vanished. While Israel was blowing apart innocent children with ruthless bombings, the UN was passing useless resolutions and statements.

The JI chief also warned Muslim world leaders, stating that Israel will surely come after them once it is finished with its campaign in Gaza. Hence, he demanded that Pakistan’s political leadership “take the lead in global measures” and urged them to “invite all like-minded people to a single platform to devise a joint global strategy” against Israel.

Other Leaders Also Addressed the Rally

Similarly, JUI-F chief Maulana Fazlur Rehman also addressed a massive rally at Shahrah-e-Quaideen. Here, he announced a “Million March” at Lahore’s Minar-e-Pakistan on April 27.

“Today’s march is not the end but the beginning,” Fazl declared. “This movement will continue. There will be a children’s march, followed by the largest march in Pakistan’s history in Multan on April 18 and in Islamabad on April 20.” The leader also called support for Gaza “a collective obligation” and emphasised the moral, diplomatic, and all other forms of backing the besieged population must receive.

The rally venues were decorated with Palestinian flags as thousands chanted slogans against Israel.

The world is protesting, and Pakistani people are no different. Yet, the million dollar question still remains: How long until these protests will bear fruit and a permanent ceasefire will be placed?
