Have You Heard of a Watermelon Soup?
There’s a new dish in town and it’s actually the most bizarre combination of two things worlds apart. If you’ve heard Katy Perry’s lyrics, “you’re hot then you’re cold” then you should know you are in familiar territory. Say hello to a soup made from watermelons and the best part? It’s spicy!
This fruity soup can be the perfect answer to a refreshing drink in the summers if you’re tired of mint margaritas and rooh afza!
Ingredients You Need
To make this innovative soup, you are going to need a watermelon that is chopped and de-seeded. Then you will need ginger-garlic paste, some mint, chilli flakes and olive oil.
Many of these are regular pantry ingredients so if you’ve got everything, enjoy your Iftar today with this.
How To Make The Soup
Begin making the soup by first sautéing the ginger-garlic paste and the chilli flakes in some olive oil. Make sure the quantity of the olive oil is not a lot because you don’t want your soup oily. Then set that aside to cool.
Next, you must puree the watermelon and the mint in a blender until completely blended. Make sure there are no lumps of watermelon in there. Then proceed to add the watermelon puree into a medium-sized saucepan with the ginger-garlic and chilli flakes mixture. Let that simmer until it thickens to the consistency of your liking. Season well with salt and pepper and then chill for 1-2 hours before serving.
To serve, add the soup, garnish with a tiny bit of olive oil and some mint leaves. Keep in mind this soup is not to be kept for storage as the watermelon can start macerating.
