1. Meat-free Aloo Gobi (Potato and Cauliflower Curry)

Ingredients:

Potatoes
Cauliflower
Tomatoes
Onions
Garlic
Ginger
Spices: turmeric, cumin, coriander, and garam masala

Instructions:

  1. Heat oil in a pan and sauté chopped onions until golden.
  2. Add minced garlic and ginger, then diced tomatoes. Cook until the tomatoes soften.
  3. Stir in the spices and mix well.
